We begin our old world family heritage meat sauce with a traditional soffritto, gently sauteing classic aromatics and vegetables in olive oil, then slowly building layers of flavor by browning carefully selected cuts of pork, beef and veal; deglazing and adding hand-milled tomatoes, herbs and imported cheeses. An all day labor of love; slow, long cooking and constant vigilance develops depth and texture, while cooking out the tomatoes acidity, bringing our rich hearty Sunday sauce to perfection!
